Weekend Recipe Corner: Instant Rice Cake

The instant rice was invented for distributions during international disasters or emergencies. When disaster strikes, the hygiene and meals for the locals is the top priority. The instant rice which is easily prepared just with water is the best and safest source of hot meals for the disaster relief workers and recipients.

In fact, with a little creativity, the instant rice can be made into unique dishes.

  • Eggless cake flour 180g
  • Water 800ml
  • Unsweetened soymilk (warm) 360ml
  • Corn-flavored Instant Rice (with attached spices) 3 packets
  • Eggless Mayonnaise 5 tablespoons
  • Cocoa powder (for chocolate cake) 3 tablespoons
  • Nuts (coarsely ground) 3 tablespoons
  • Raisins 3 tablespoons
  • Dried cranberries/berries 3 tablespoons
  • Cake/pastry parchment (cut into the size of the baking pan) 2 sheets

  1. Lay the pastry parchment on a 10 in. x 10 in. square baking pan.
  2. Mix the cake flour with 400 ml of water and divide the batter into 2 parts. First part is original flavor (optionally add 1 teaspoon of vanilla extract). Add cocoa powder to the other part. Pour the batter into separate baking pans. Bake at 375°F (190°C) for 30-35 minutes and let them cool.
  3. For the topping, mix the 3 packets of instant rice with the spices and unsweetened soy milk. Cover the bowl and let the rice soak for 20 minutes. Once the soy milk cools, lightly mix in eggless mayonnaise, nuts, raisins and dried berries.
  4. Remove the chocolate and original flavored cake from the parchment and spread a thin layer of the topping between the two cakes.
